In the misty highlands of San Ignacio, Cajamarca, the Andes rise and fall like silent waves of green. Between 1,750 and 2,000 meters above sea level, smallholder farmers nurture one of the world’s most cherished varieties — Gesha. The region’s volcanic soil, cool climate, and biodiversity form a natural sanctuary where each coffee tree grows in balance with its surroundings.

Here, coffee is cultivated by hand, not by habit. Farmers pick only ripe cherries, working under the gentle light of the mountains. Their approach is rooted in tradition yet guided by modern understanding — organic, sustainable, and deeply respectful of nature’s rhythm.

Varieties and Altitude

The Gesha variety, originally discovered in Ethiopia, thrives remarkably well in Peru’s northern Andes. At high altitude, the slower cherry maturation allows sugars and aromatic compounds to develop fully. The result is a cup that combines clarity and sweetness — a reflection of the air it breathes and the soil it springs from.

Each tree embodies both legacy and adaptation: Ethiopia’s wild elegance reborn through the tranquility of Cajamarca. This is how Gesha Peru finds its voice — graceful, layered, and quietly confident.

Processing and Craft

After harvest, each cherry is carefully washed and sun-dried, a process that requires both patience and precision. The aim is to protect the bean’s delicate floral character and natural sweetness. The result is a cup where terroir and craftsmanship meet in harmony.
